Beetroot and orange salad with stilton
A fresh and colorful composition, rich in vitamins, which combines red beets and oranges with the pronounced taste of stilton cheese. try also this skyr cake with blueberries recipe too.
Ingredients
Appetizer For 4 people
500 g of cooked beets
3 oranges
1 bunch of mixed aromatic herbs, eg. chives, basil
4 tablespoons of olive oil
4 tablespoons of herb vinegar
2 teaspoons of grainy mustard
salt
pepper
100 g of stilton
30 g of purslane

How to proceed
Preparation: approx. 25 minutes
Rinse and scrub the beets under running water, then cut them into thin slices with a mandolin. Peel the oranges in vivo and cut them into thin slices. Coarsely chop the herbs and place them in a tall container with the oil, vinegar, mustard, salt and pepper. Blend with the hand blender until you get a creamy sauce. Season with salt and pepper. Arrange the beets and oranges on the plates. Crumble the stilton and spread it over the salad. Dress with the sauce and garnish with purslane.
