Radicchio with green peas
A true vegetarian delicacy with a Mediterranean charm: radicchio, cooked with honey and oranges and served with peas in butter. try also this lentil cappuccino recipe too.
Ingredients

250 g of dried green peas
2 radicchio of approx. 350 g
2 oranges, e.g., blood orange
1 red onion
2 cloves of garlic
1 bunch of parsley
2 tablespoons of butter
salt
pepper
4 tablespoons of olive oil
2 tablespoons of liquid honey

How to proceed
Preparation: approx. 60 minutes
The day before, soak the peas in cold water.
On the day of preparation, halve the radicchio lengthwise and put them in a saucepan. Cover it with water. Stew covered for approx. 20 minutes. Remove the radicchio from the water, let it drain well and set aside.
Peel the oranges. Free the segments from the cuticle with a sharp knife, making sure to collect the juice that comes out. Squeeze the empty cuticles well. Halve the onion and cut it into slices. Chop the garlic. Drain the peas, rinse them under cold water, cover them with fresh water and let them boil for approx. 25 minutes. Drain the rest of the water. Chop the parsley and mix it with the peas with the butter. Season with salt and pepper.
Heat the oil in a pan. Add the radicchio, onion and garlic and brown everything for approx. 5 minutes. Add the wedges, orange juice and honey and let it reduce for approx. 10 minutes.
